Pasta with Pumpkin-lentil sauce

Ingredients (4 people)

  • 300 gr wholegrain pasta
  • 500 gr pumpkin (one small one)
  • 1 clove of garlic
  • 1 onion
  • 1 can of diced tomatoes
  • 2 carrots
  • 200 gr lentils
  • Salt 
  • Pepper 
  • Chili powder 
  • Coconut oil

Procedure

  1. Cook the pasta following the instructions. Meanwhile, heat some coconut oil in a pan, while chopping the onion, garlic, carrots, and pumpkin.
  2. Bake the onion and garlic for about five minutes, then add the carrots and pumpkin, and bake for another 5 minutes.
  3. Add the lentils, diced tomatoes, salt, pepper, chili powder, and 500 ml of water.
  4. Let it boil for 15 minutes.
  5. Put half of the lentil sauce in your blender to make it smooth, then put it back in the pan and stir.
  6. Serve the pasta with the sauce and enjoy!
