Banana bread

Do you always throw overripe bananas away? That’s a pity! Because it is very easy to make banana bread out of your bananas.

Ingredients

  • 5 bananas (as ripe as possible)
  • 2 tbs coconut oil
  • 2 tbs agave sirup, date sirup or rice sirup
  • 2 tbs broken flax seeds
  • 200 grams flour (buckhwheat, whole-grain, etc.)
  • 1 tbs cinnamon
  • 1 tsp bakpoeder
  • 1 tsp baking soda
  • 2 tbs apple cider vinegar
  • 1 tbs vegan egg (optional)
  • Vanilla aroma to taste
  • Salt to taste
  • 3 tbs cacao powder 

Procedure

  1. Preheat the oven to 180 degrees. 
  2. Keep one banana aside and cut the other bananas in little pieces – yes, wíth the skin! Blend this with the flaxseeds, coconut oil and agave syrup. If your blender is too weak, you could mix it in two times.  
  3. Mix in a big bowl the flour, cinnamon, baking powder, vegan egg, vanilla aroma and salt. Mix it well together with a wooden spoon. 
  4. Mix in a different small bowl the baking powder with the apple cider vinegar. It is going to frizzle, but that’s fine. 
  5. Mix the banana mixture from the blender with the dry ingredients and add the apple cider vinegar – baking soda mixture as well. 
  6. Put about one third of dit mixture in a different bowl and add the cacao powder with half a glass of water. The quantity and structure of this chocolate mixture and the other mixture should be around the same.  
  7. Use a baking form with baking paper. 
  8. Fill it with one half of the vanilla mixture and smoothen it with the wooden spoon. Put one half of the chocolate mixture on top of this. Make sure the two layers don’t mix. Repeat this till no more mixture is left.  
  9. Make with the backside of your spoon S’s and curves, from one side to the other and from the bottom of the cake to the top of the cake. Make it smooth again. 
  10. Cut the leftover banana in half and put the two halves on top of your cake. You could even decorate it with nuts and other stuff. 
  11. Bake 35-45 minutes in your preheated oven. Your cake is ready if your fork stays dry when you put it in your banana bread. 

How to use it?

  • One delicious slice during breakfast, with peanut butter. 
  • In smaller pieces as a (late night) snack. It does well at parties!
  • In small pieces in your yoghurt, with red fruit and nuts. 
  • Cut your cake in slices and freeze it, in a tupperware or a freezer bag. This way, you can take a small piece from your freezer every time.
