Besan Ladoo (or laddu) are Indian sweet bites (produced in Machilipatnam of Krishna district in the Indian state of Andhra Pradesh) traditionally made of besan (gram flour), sugar and cardamoms fried in ghee (clarified butter). Those treats are normally baked ina “kadai” a specific firebowls, but you can substitute it with a good pan or wok.

Ingredients (4-6 servings)                                                        

  • 2 cups of Besan (Hindi for “gram flour”), बेसन
  • ½ cup vegan butter and a tbsp of coconut oil (to replace the ghee), घी
  • ¼ tsp Turmeric Powder, हल्दी पाउडर
  • ½ cup Cashew nuts, finely chopped, काजू
  • 1 level tsp Cardamom powder, इलायची पाउडर
  • 1 cup Powdered sugar, पिसी चीनी

For Garnish

  • Silver varq, चांदी का वर्ख

Procedure

  1. In a kadai (traditional “firebowls”, add besan, roast it for a small time to get rid of the smell. 
  2. Add turmeric powder to get a nicer colour and some antioxydant
  3. Now, add vegan butter in the besan, and roast it well.
  4. Add 1 tsp of vegan butter or coconut oil to roast the cashews in the mixture and add chopped cashew 
  5. Leave the mixture to cool at room temperature.
  6. Now, add cardamom powder and powdered sugar in and mix well.
  7. Start shaping the ladoos in balls by rolling them into your hands.
  8. Once prepared, garnish with silver varq and serve.

Pro tip: roasting besan properly is the key for aromatic ladoos. If they are under roasted the bites will taste too raw and not aromatic enough. If over roasted the ladoos can become bitter. So roasting the besan while stirring constantly on medium to low heat is therefore key for delicious ladoos.
