Vegan Bean Sweet Potato Burgers

At most supermarkets, you can only purchase sweet potatoes in packages of half a kilo or even a kilo. You’ll most certainly be left with loads of them. An easy and tasty solution is this sweet potato burger. They mostly consist of vegetables, are gluten free (if you use gluten free bread), obviously vegan + you can go in any direction with them, depending on the toppings you choose.

Ingredients (4 people):

  • 1 sweet potato
  • 50 gr (wholegrain) couscous (or quinoa)
  • 1 can beans (black / red / kidney)
  • 50 gr almonds
  • 1 onion
  • 2 cloves garlic
  • Soy sauce
  • Lemon juice
  • Paprika powder
  • Salt
  • Pepper
  • Chili powder
  • Coconut oil
  • 6 bread rolls (we used spelt)

Toppings (suggestions):

  • 1 avocado
  • 1 tomato
  • Lettuce
  • Pesto

Procedure:

  1. Boil some water and cook the couscous / quinoa using the instructions o the package. Boil some water in another pan as well.
  2. Heat some coconut oil in a baking pan. Cut the onion and garlic into small pieces. Add the onion and garlic to the pan.
  3. Cut the sweet potato into small pieces, and put it in the boiled water for 10 minutes, while you do the other steps.
  4. Add the beans to the onion and garlic and let it bake for just about three minutes. Use a masher to mash the beans, onion and garlic.
  5. Put the sweet potato in the blender, together with the almonds.
  6. Blend the 2 mixtures together with some soy sauce, paprika powder, salt, and pepper. Use the masher. You might have to use your blender when it’s too heavy for your masher.
  7. Make 8 burgers, and put them in a pan with coconut oil. You want them to look golden brown, which requires approx 7 minutes of baking on each side.
  8. Meanwhile, cut your toppings. On our site you can find recipes for a vegan pesto and a vegan mayonaise which will taste perfect with this burger.
  9. Serve the burgers on the bread rolls with the toppings, and enjoy!
