Three healthy salad dressings

Creamy paprika dressing

What’s so great about paprika, other than how good it tastes? Just 1 tbsp contains 20% of your daily Vitamin A requirements. Vitamin A supports a strong immune system because it is essential for the body to produce white blood cells (the cells that fight viruses). With this dressing, you improve your veggies while boosting your immunity!
Ingredients (makes enough for 2-4 salads)

  • 2 tbsp cashew nut butter
  • 1/2-1 tbsp smoked paprika powder
  • 1 squeeze of lemon juice
  • Salt to taste
  • 2-4 tbsp water
Method

  1. In a small bowl, mix together the cashew butter, lemon juice and paprika powder.
  2. Add the water 1 tbsp at a time and mix well, until the mixture is smooth and the right consistency for you. The amount of water you need will depend on the brand of cashew butter and how thick you want the dressing to be.
  3. Add salt to taste.
  4. Drizzle over your salad.

Who doesn’t love peanut sauce?

And there’s more to love about peanuts than just the flavour. Peanuts contain Vitamin B3 (niacin), which protects the brain from decline.
What’s more, they help you balance your appetite thanks to plant protein and fibre. You now have an excuse to add more peanut butter to your life (you’re welcome!).
Ingredients:

  • 2 tbsp smooth peanut butter
  • 1 tbsp tamari sauce
  • 2-3 tbsp water
Method:

  1. In a small bowl, mix together the peanut butter and tamari sauce.
  2. Add the water 1 tbsp at a time and mix well until completely smooth. The amount of water will depend on the brand of peanut butter you use.
  3. Drizzle over your salad.

Why is tahini amazing?

It’s made from sesame seeds, which are packed with healthy fats (good for your brain), protein (keeps you satisfied after a meal), and zinc (supports the immune system). Add the antioxidant power of turmeric, and you’ve got a seriously superfoody dressing for your salad!
Ingredients:

  • 2 tbsp tahini
  • 1 tbsp maple syrup (or rice syrup)
  • 1 tsp turmeric powder
  • Salt and pepper to taste
  • 2-4 tbsp water
Method:

  1. In a small bowl, mix together the tahini, maple syrup and turmeric.
  2. Add the water 1 tbsp at a time and mix well, until smooth and the right consistency for you. The amount of water you need will depend on the brand of tahini and how thick you want the dressing to be.
