This omelette without eggs is a delicious dish prepared with chickpea flour. To be served as a main course or as an appetizer.
Ingredients (for 1 big baking tray):
240 gr of chickpea flour
720 gr of water
10 tablespoons of olive oil
Vegetables of choice (e.g. potatoes and onion, or spinach and cauliflower)
Herbs and spices of choice (e.g. thyme, basil, or nutmeg)
Optional: salt to taste
Procedure:
Mix the water with the flour in a bit bowl with a whisk until the mixture smoothens. Add the oil and whisk again. Let it rest while you steam or bake the veggies with the herbs and spices.
When the vegetables are almost cooked, cut these into thin slices.
Then, mix them into the liquid flour mix, and cover the greased baking tray completely.
Bake this in a pre-heated oven at 200°C for approximately 25 minutes. If your oven has a fan mode we recommend using that one! Let cool a bit before you cut the farfrittata in pieces. Bon appetit! 🙂
