Celery baby burgers

This recipe comes hot off the plate from last night’s dinner and was an instant GZG hit.[:]

Ingredients

  • 1 celery root
  • 2 small onions
  • 1-2 pieces of garlic
  • 2 tablespoons soy flour or 4 tablespoons of soy milk
  • breadcrumbs or flour
  • 1 teaspoon mustard, 1 teaspoon tomato paste
  • salt, pepper, nutmeg, paprika

Instructions

  1. First peel the celery, cut it into small pieces and cook it until it’s nice soft. (Don’t throw the liquid away, you can use the stew for other stuff,put it in a bottle in the fridge).
  2. Then you can use a masher, blender or hand mixer to get the pieces more into a puree.
  3. Add the cut onion,garlic and the spices.
  4. The soy flour or milk is kind of a alternative for the egg,that it sticks better together. Add it.
  5. Then add the paneermeel or flour until the mixture it’s not watery anymore and you can form little balls or patties out of the masse. (If it’s too sticky flour your hands)
  6. Heat a pan, put in enough oil (raps/sunflower/soy) and fry the balls until their nice golden brown.
  7. Enjoy it with stamppot, some mixed veggies and a mint-yoghurt-dip.
