Do you have guests over and do you want to make something easy yet colourful and tasty? Surprise them with this delicious red beetroot soup. The soup is mostly made up from vegetables and can be made a bit more filling by serving some bread with it.
Ingredients (2 people):
1 onion
1 clove of garlic
500 gr beetroot, already cooked
1 sweet potato
Coconut oil
Lemon juice
¾ vegetable stock cube
Fresh mint
Toasted bread (optional)
Procedure:
Cut the onion, garlic, beetroot and sweet potato (peel this one first). Meanwhile, boil 750 ml of water.
Add the vegetable stock and the sweet potato to the boiling water for 10 minutes.
Add salt, pepper, lemon juice, and beetroot, and let it cook for another 5 minutes.
Meanwhile, put the onion and garlic in the pan with coconut oil for 5 minutes. If you’re having toasted bread with it, this is the time to toast your bread either way in the toaster or the pan.
Put the garlic + onion and all the other stuff in the blender, and blender until you have a smooth soup.
