Lentil and quinoa bowl

When it’s time to finish your leftovers in the fridge, you can always come up with delicious combinations, like lentils and quinoa. They’re both extremely healthy and they easily go with a lot of other ingredients. Here’s a version with tons of veggies and pesto.


For 2 people

  • 200 gr lentils
  • 150 gr quinoa
  • 1 tomato
  • ½ avocado
  • 50 gr spinach (or rocket)
  • 50 gr salsify (optional – I had this left)
  • 40 ml vegan pesto
  • 2 tbs flavored oil (such as sesame or walnut)
  • 1 tbs pine nuts
  • Salt
  • Pepper


  1. Cook the quinoa following the instructions on the pack (or use your leftover). Meanwhile, cut the avocado, tomato, and salsify.
  2. In a small bowl, mix together the pesto with the truffle oil to create a stunning dressing.
  3. Bake the pine nuts in a small pan.
  4. When the quinoa is almost ready, add the lentils to make them warm.
  5. Mix everything together in a bowl, and add salt and pepper to taste.
