Vegan Eggplants Pizza’s

These eggplant pizzas are super easy to make but very tasty and will do as a healthy snack, bite, lunch, or dinner

Ingredients

For 20 mini pizza’s (snack for 3 to 4 people / lunch or dinner for 2 people):

  • 1 eggplant
  • 50 gr condensed tomato sauce
  • 2 cloves of garlic
  • Salt
  • Pepper 
  • Italian herbs
  • Dried basil
  • Oregano
  • Paprika powder
  • Chili powder
  • Fresh herbs like basil or coriander

Procedure:

  1. Preheat the oven at 180 degrees.
  2. Chop the eggplant in slices of ½ cm (5 mm) and put salt on it.
  3. Spread the eggplant over a baking sheet.
  4. Add tomato sauce to the slices.
  5. Chop the garlic into very small pieces and sprinkle it with the dried herbs and spices over the pizza’s.
  6. Bake for 15 mins
  7. Finish off with the fresh herbs.
