Carrot-ginger coconut soup

Soup is always a good idea!

Ingredients (for 2 people)

  • 600 grams of carrots
  • 1 white onion
  • 3 cloves of garlic
  • a piece of ginger (like 5 cm)
  • 1 can coconut milk (at least 70% coconut)
  • ½ tsp cumin powder 
  • ½ tsp coriander powder 
  • cayenne pepper powder to taste
  • water
  • minimal oil

Procedure:

  1. Cut the carrots, onion, ginger and garlic (no need to make small pieces) and stir them a bit in a soup pan with some oil.
  2. Add some water (enough to let everything simmer) and let them cook until almost soft.
  3. Add the coconut milk and spices and blend everything with an immersion blender
    The consistency should be not too thick, a spoon placed in the middle has to fall on the side. If too thick, add more water.

Tip: serve it with some crunchy croutons on top!
