A vegan burger which is tasty and healthy and also very easy to make. You could add (homemade) fries, but without them it is also a meal (when you add extra vegetables and lettuce).
Ingredients (4 portions):
1 onion
2 cloves garlic
100 gr oats
1 carrot
1 can kidney beans
2 tbs soy sauce
Paprika powder
Chili powder
Salt
Coconut oil
8 small burger rolls (or 4 big ones)
1 avocado
1 tomato
4 tbs pesto
Watercress
Bit of rocket/ spinach (optional)
Recipe:
Chop the onion, garlic, carrot, avocado, and tomato.
In a pan, bake the onion with garlic for 2 minutes.
Add the carrot, paprika powder, chili powder and salt. Bake for another 2 minutes.
Using a fork, make some kind of dough out of the drained beans in a bowl.
Add the ingredients from the pan + soy sauce and oats and mix.
Create 8 small or 4 big burgers and bake them in a pan with coconut oil for 5 minutes per side, until they’re golden brown. Pro tip: use 2 pans, saves you half the time.
Slice your bun and add a layer of pesto to the top half. Start building: bread, avocado, tomato, burger, watercress, rocket, and finally the bread with pesto. Serve with your parsnip fries and eat with love.
